Eggs have been given a bad rap over the years, especially the yolk. I used to throw away the yolk and just eat the white; they still offer egg white only omelets in restaurants. The yolk is the most nutritious part of the egg; throw away the white and just eat the yolk for the most nutrition. When cooking eggs you will get more nutrition from the yolk the less it is cooked. Go for a couple of easy over eggs today, or when hard boiling them leave the yolk more on the runny side….Boil for just 3 minutes and cool in water.
